Peach jam with honey - no granulated sugar!

It’s peach season here in Colorado! For those who don’t know- there’s a small town on the Western Slope of our state called Palisade that produces the most juicy, sweet peaches in the whole world! We make it a priority to get our hands on a couple of flats each year. This year I have made peach salsa and peach jam with honey- and just had to share these recipes with you!

Peach Jam with Honey

8-9 ripe peaches

1/4 cup fresh squeezed lemon

5 tbsp pectin

3 cups honey

  1. Peel your peaches and dice into small chunks. You can blanche the peaches in boiling water to make this step easier, but we just used a paring knife.

  2. Toss peaches with lemon juice. This prevents browning and adds fresh flavor to the jam.

  3. Add peaches and lemon to a thick-bottomed pot. Add honey.

  4. Bring the mixture to a boil, then add pectin.

  5. Boil for 5 minutes then remove from heat, put lid on and wait ~20 minutes until jam solidifies to a good consistency.

  6. Use the jam right away, store in the refrigerator or can it using whichever technique you prefer. Enjoy!!
