Sea Salted Honey Caramels

2 cups Tabernash Honey

1/2 cup sugar

1/2 cup butter

1/2 cup heavy whipping cream

  1. Using a high-sided pot, heat 2 cups of Tabernash Honey on medium until liquidy

  2. Add 1/2 cup sugar and heat until sugar dissolves, bring liquid to a boil.

  3. Cut butter into 1 inch thick knobs and add to mixture. When butter is dissolved, add heavy cream.

  4. Heat mixture til’ it reaches the “soft-ball” stage, about 244 degrees F

  5. Pour mixture onto a baking tray lined with parchment

  6. Wait 5 minutes for caramels to cool slightly, then sprinkle with sea salt

  7. Let caramels cool for 1 hour.

  8. Cut into 1/2” pieces

  9. Wrap in wax or parchment paper- and enjoy!
